Butchery Classes


 
 
Butchery Classes at Meridian Meats are carried out by Jim Sutcliffe. We offer a range of evening courses aimed at teaching you all about the meat, where it comes from, how and when it is used and also a range of basic butchery skills. Jim is well versed in all aspects of cutting meat, the ageing process, how to make cured meats and sausages.
 
At present there are 3 main classes on offer, Lamb, Pork and Sausages but more will be added in due course. Classes run on most Wednesday evenings, starting at 6pm and last approximately 3 and a half hours. Each class will take you through the butchery of that particular subject before you are taught how to prepare some cuts, followed by sitting down to a feast prepared from the meat we have butchered. After which the evening concludes and you get to take home your cuts of meat, graduation T-shirt and certificate.

Please be aware that all classes are subject to availability, specific dates or days are not always available due to the popularity of the classes. Places are limited to small numbers which helps us to give you the best tuition possible, so book one of our classes today. Private Group bookings are becoming more and more popular for Butchery Classes. We have taken group bookings for a range of things including Corporate events.
To make the class a private event, you will need to book out a minimum number of spaces. Over 18's only. 
 
We have good transport links, and can arrange transport to and from Newark Northgate & Grimsby Town Stations for people wishing to travel from further away such as London or Manchester, we can also arrange over night accommodation at The Pack Horse which is just opposite our shop.

Butchery Class Token

Butchery Class tokens are 125 each per person and can be redeemed against any of the classes on any date with availability  They are valid for 12 months.

The vouchers are well presented to give as a gift and come with a leaflet explaining the different classes and a receipt.
 
If you canot wait for the post, we can alternatively send a voucher via email for you to print off yourself, please specify which you would like.
 
Vouchers can be redeemed by calling us at the shop. The recipient of the voucher can then book themselves on a date to suit them. If you are redeeming a voucher, you will need to quote your unique reference number when booking, this can be found on the voucher. 

 

Lamb Butchery Class

The evening starts with a welcome and introduction, where you will receive a name tag, protective clothing and a knife!
 
Jim will take you through the break down of the lamb and explain the different cuts, how to cook them and teach you various butchery techniques. You will then be able to try your hand at boning and rolling a shoulder and preparing a french trimmed rack of lamb, both of which are yours to take home at the end of the evening.

The evening finishes with a feast of slow cooked shoulder of lamb with all the trimmings and a complimentary glass of wine.
 
On completion of the course a graduation T-Shirt, Certificate and the shoulder and rack that you have prepared are yours to take home.
 
 

 

Pork Butchery Class

The evening starts with a welcome and introduction, where you will receive a name tag, protective clothing and a knife!
 
Jim will take you through the break down of the pork carcase and explain the different cuts, how to cook them and teach you various butchery techniques. You will then be able to try your hand at boning and rolling the loin of pork and preparing a bath chap, both of which are yours to take home at the end of the evening.
 
The evening finishes with a feast of roast pork with all the trimmings and a complimentary glass of wine.
 
On completion of the course a graduation T-Shirt, Certificate and the loin and chap that you have prepared are yours to take home.
 

 

Sausage Making Class

The Sausage Making evening is probably the most hands on of our classes. The evening starts with a welcome and introduction, where you will receive a name tag, protective clothing.
 
The group will learn about the different ingredients that go into sausages and learn lots of cooking tips. You will mince the prepared pork and prepare the herbs and spices which will be blended with the meat.

You will find it humorous and challenging operating the sausage filler which forces the meat into the skins, even if you get this part right you still have to learn how to link the natural skins into groups of 3 which will hang in our coldroom ready for you to take home.
 
The evening finishes with a feast of sausages and a complimentary glass of wine.
 
On completion of the course a graduation T-Shirt, Certificate and the sausages that you have prepared are yours to take home.
